The Oyster Bar Red Shrimp Scampi

Ingredients:

  • 1/8 cup olive oil
  • 1/2 tsp garlic, minced
  • A pinch of kosher salt
  • A pinch of fresh ground black pepper
  • 1/2 tsp oregano, whole
  • 6 jumbo raw shrimp, peeled & deveined with tail on
  • 1/8 cup white wine
  • 1/2 cup clam broth
  • 1/2 cup tomato, diced
  • 1 cup marinara sauce
  • 2 tbsp of fresh basil, sliced thinly
  • 1/2 lb cooked linguine
  • 1/2 tsp Italian parsley, chopped

Method of Preparation:

  1. Sauté the minced garlic, kosher salt, fresh ground black pepper and oregano in olive oil for 3 minutes
  2. Add the shrimp to the sauté pan and cook for 2 minutes on each side
  3. Pour the white wine into the pan and allow the wine to reduce by 75%
  4. Add the clam broth and cook until reduced and shrimp are cooked through
  5. Add marinara sauce and basil
  6. Bring to a simmer
  7. Pour sauce over hot linguine and garnish with parsley
  8. Enjoy!
