T-Bones Charred Sweet Corn

Ingredients:

  • 16 Ears of Aspen Corn
  • 8 oz Lime Butter (recipe below)
  • 8 oz Chipotle Mayo (recipe below)
  • 3 oz Cilantro, finely chopped
  • 3 oz Cotija cheese

Method of Preparation:

  1. Preheat sauté pan to medium-high heat.
  2. Place corn in hot sauté pan and toss until charred.
  3. Once the corn begins to blister and caramelize, add in the lime butter.
  4. Toss in the finely chopped cilantro.
  5. Place into serving dish.
  6. Sprinkle with Cotija cheese.
  7. Place a dollop of the Chipotle mayo on top and serve.

Lime Butter

Ingredients:

  • 1 pound unsalted butter, room temperature
  • 6 limes, juiced
  • 1 clove garlic, peeled
  • 1/2 Tbsp kosher salt
  • 1/4 tsp black pepper

Method of Preparation:

  1. Combine all the ingredients in a food processor and whip until smooth.

Chipotle Mayonnaise

Ingredients:

  • 2 cups mayonnaise
  • 1 can Chipotle Peppers
  • 1 Tbsp smoked Paprika
  • 3 oz granulated sugar
  • 1 Tbsp kosher salt

Method of Preparation:

  1. Open can of chipotle peppers and discard seeds.
  2. Combine all ingredients in blender until smooth.
