summer melon salad

Melon salad



1 lb         Watermelon, diced

8 oz        Cantaloupe, diced or melon ball scooped

¼ cup    Toasted walnuts, chopped

10           Basil leaves, chopped

16           Mint leaves, torn

1 cup     Cherry tomatoes, quartered

½ cup    Fresh squeezed lime juice

2 Tbsp   Honey

1 Tbsp   Extra Virgin Olive Oil

Salt and Fresh Cracked black pepper, to taste

Method of Preparation:

  1. Chill watermelon and cantaloupe overnight
  2. Cut melons and then mix together with the tomatoes, basil and mint
  3. Season with salt and pepper
  4. In a separate bowl, mix the lime juice and honey
  5. Once honey is stirred into the lime juice and dissolved, drizzle over the melon and tomato mixture and toss
  6. Place in a serving bowl and garnish with toasted walnuts and a drizzle of extra virgin olive oil
  7. Enjoy!
