Fettuccine Primavera

 

INGREDIENTS:

2 Tbsp butter

Pinch of Black Pepper

1 sliced Portobello Mushroom

8 Basil Leaves, chopped

3 Asparagus stalks (cut into ½” pieces)

6 Steamed Broccoli Buds (chopped)

8 Red Peppers (sliced into ¼” pieces)

1 Zucchini (diced)

1 small diced Tomato

6 oz Cream

4 oz Cooked Fettuccine

3 Tbsp Parmesan Cheese

Pinch of Italian Parsley, chopped

1 sprig Basil (for garnish)

 

METHOD OF PREPARATION:

    1. IN A SAUTE PAN MELT BUTTER(DO NOT BROWN)
    2. ADD PEPPER AND SAUTEE VEGETABLES, THEN ADD CREAM
    3. REDUCE BY A THIRD AND ADD BOILED PASTA
    4. SIMMER FOR 30 SECONDS AND ADD GRATED PARMESAN CHEESE
    5. PULL OFF HEAT AND SPRINKLE WITH PARSLEY
    6. TOSS AND SERVE IN A PASTA BOWL AND .GARNISH WITH A SPRIG OF BASIL
