corned beef hash for two

corned beef hash

 

INGREDIENTS:

8 oz Corned Beef Hash, chopped

2 Tbsp butter

½ cup potatoes, cooked and diced

¼ cup green bell pepper, diced

¼ cup onion, diced

2 eggs, cooked to your liking

½ tsp salt

¼ tsp pepper

¼ tsp granulated garlic

¼ tsp onion powder

1 Tbsp chopped parsley


METHOD OF PREPARATION:

  1. Place cooked cornedbeef in a food processor and pulse to chop
  2. Heat a pan on the stove with medium heat.Add butter and sauté onions, peppers and potatoes
  3. Cook until onions begin to caramelize and potatoes brown, then add chopped corned beef
  4. Season with salt, pepper, garlic and onion powder
  5. Once corned beef mixture is brown and crispy, crack eggs on top of the hash
  6. Continue to cook over low or medium heat until eggs are at desired doneness
  7. Garnish with parsley
  8. Enjoy!
