INGREDIENTS:

6 WHITE FRESH CORN COBS

1 CUP MAYONAISE

2 CUPS COTIJA CHEESE

6 LIME WEDGES

CHILI SPICE OR TAJIN TO TASTE

SALT AND PEPPER TO TASTE

METHOD OF PREPARATION:

Peel corn husk off of corn and bring pot of water to a boil on the stove top. Submerge corn on the cob in water and cook for 3-5 minutes to soften kernels.  Remove from water and cook corn on grill moving it to char and grill exterior of corn. When finished grilling corn, brush it with mayonaise, season with salt and pepper, sprinkle cotija cheese on corn and spice it up with tajin or spicy seasoning of choice.
