CHEF MICHAEL SYMON OPENS MABEL’S BBQ AT PALMS CASINO RESORT, BRINGING HIS BELOVED BARBEQUE TO LAS VEGAS
This marks Symon’s Vegas debut and first expansion of his Cleveland-based restaurant
LAS VEGAS, NV (December 20, 2018) — Today, Food Network Iron Chef and James Beard winner Michael Symon debuts his beloved Cleveland BBQ restaurant, Mabel’s BBQ at Palms Casino Resort. Offering a Las Vegas inflection to the classic American culinary tradition, Mabel’s BBQ showcases classic barbeque staples, blended with Symon’s interpretation of the diverse flavors and cuisines from around the world that make up Vegas’ vibrant city.
“Through Mabel’s BBQ, I’ve had the opportunity to create a barbeque style that Clevelanders can call their own, and I’m excited to do the same for the Vegas community,” says Michael Symon. “I think we’re doing something Vegas has never seen before and that’s authentic barbeque, cooked and hand-carved on-site for a real smokehouse experience.”
Serving familiar and comforting barbeque dishes taken up a notch, Mabel’s BBQ will feature favorites like Smoked Brisket and Pork Belly seasoned with Symon’s signature blend of Eastern European spices and served by the half pound. Other classics include sandwiches such as Pulled Chicken, Brisket or Pork Tacos with onions, cilantro, radish, lime and cotija. Pig Parts, a Mabel’s BBQ signature, includes selections of crispy tails, ears and cracklings, all paired with classic sides like Baked Beans, Mac & Cheese and Poppy Seed Coleslaw.
The bourbon and tap craft beer bar program will be heavily localized, incorporating a significant portion of Nevada-based producers, in addition to limited release bourbons. The rotating draft beer selection will be poured directly from the cooler line, adjusting temperatures based on the brew, while Mabel’s BBQ’s staff will help guide guests through the heavily curated bourbon list.
“We’re very much looking forward to introducing Michael and Mabel’s BBQ to the Las Vegas dining scene here at Palms,” said Jon Gray, General Manager of Palms Casino Resort. “Michael has created a casual gathering place where everyone feels at home, whether they are guests of the Palms or Vegas locals.”
Located on the main floor of the Palms immediately adjacent to the main entrance, Mabel’s BBQ captures the high energy of Las Vegas, offering a communal dining experience outfitted with large TVs. Designed by Parts and Labor and Modeled after West Side Market, Cleveland’s oldest food hall, Mabel’s BBQ boasts arched ceilings, exposed brick walls and industrial lighting, reminiscent of a traditional smokehouse. Mabel’s BBQ will also feature a back patio, complete with games, local draft beers and frozen cocktails with a focus on tequila and agave-based spirits, a custom food truck, and space for live entertainment. Unique to the Las Vegas outpost will be Sara’s, a first-of-its-kind Meateasy, tucked away behind the walls of the restaurant.
Mabel’s BBQ is the second of three chef-driven concepts to open at the Palms as part of its $690 million remodel. This follows Marc Vetri’s Vetri Cucina which opened in November, with Bobby Flay’s Shark to open in March 2019. Other dining options coming to Palms in 2019 include Greene St. Kitchen and Michelin-starred dim sum Tim Ho Wan.
