Grilled mexican street corn

Grilled Mexican Street Corn



6 Sweet corn, husks removed
1/2 cup Mexican crema, or sour cream
1/2 cup Mayonnaise
1/2 cup Minced cilantro
1/4 Tsp Ground chipotle pepper
2 Tsp Lime Zest
2 Tbsp. Lime juice
8 Lemon wedges
1 clove of Garlic, minced
1/2 cup Cotija cheese
Salt to taste
Black pepper to taste

1. Heat gas or charcoal grill to 400F.
2.In a bowl, whisk together the crema, mayonnaise. Cilantro, garlic, chipotle pepper, lime zest and lime juice season with salt and pepper to taste. Set aside.
3.Place the husked corn directly on grill. Grill the corn for about 5 minutes or until kernels begin to turn golden brown and look charred. When all sides are browned remove from grill and place on a plate.
4. Using a brush or spoon coat each ear of corn with the crema mixture. Sprinkle with crumbled cojita cheese. Sprinkle with additional chipotle. Serve with lime wedges.
