Curry roasted cauliflower

Curry Roasted Cauliflower

  

INGREDIENTS:

 

1 head of cauliflower, cut into florets
1 tablespoon of olive oil
1 teaspoon of salt
1/2 teaspoon of pepper
1 cup of Greek yogurt
1 tablespoon of curry powder
1 teaspoon of cumin
2 tablespoon of fresh chopped mint

METHOD OF PREPARATION:
Cut cauliflower into florets, and toss in olive oil, salt and pepper. Place on a cooking tray and bake in a preheated oven at 375 degrees for 15 minutes.  Remove from oven and allow to cool for 5 minutes.  Remove from baking tray and toss in a mixture of the yogurt, cumin and curry powder. Place back in oven on cooking tray and cook for an additional 12 -15 minutes until golden brown and fork tender. Garnish with fresh chopped mint and serve.
